you should try it next time with stuffed red/ yellow/ orange/ white/ or green peppers. that way you won't have to gouch out an entire onion (kudos to you for your effort though!) and you can still have the stuffing stuffed in something. peppers would be yummy, i think, and a friendly alternative (taste and preparation) to the onion. you could also cut a large eggplant in half and omit the insides, stuffing the eggplant horizontally. if you do eggplant though, make sure to add some onion and pepper to the stuffing mix to flavor it up. good luck girl! love it! :)
