Dave and Angie made this curry, with a few changes that I'm aware of, last week.
1. They added carrots. Good idea. I was going to do that, but then didn't have time to wash, peel, and slice them.
2. I think they added a little less ginger.
3. Dave said it was "a little too spicy" and Angie said it wasn't so much too spicy as the curry was a bit overpowering. You could try reducing the curry and, if you're looking for other flavors, adding a little cumin or other spices.
